Why is the sash blue - did he switch from security to medical?

(Is this an alternate universe version of him where he reclaims his honor after a particular encounter with a barrel...?)

It's like Worf's sash or Ro's earring: it's entirely related to their native culture and has absolutely nothing to do with Starfleet. They were just given the clearance to wear it as part of their uniform on the grounds of that item being culturally significant to their species. The fact that this sash happens to be colored similar to one of the three standard Starfleet colors is entirely coincidental and entirely unrelated to their division, rank, or anything.

Orientation aside, as a relatively avid fan of the series as a whole, you should find Lower Decks to be a detail-heavy love letter to Trek. I will note that the first season is a bit too Rick and Morty, but like TNG, season 2 improves considerably.

But is The Orville first or Lower Decks? (In preferred watch order, obviously they are different universes) I hear the former. And then The Expanse before either. And then maybe The Foundation? So many great shows to watch!!! I can't keep up though!?!?!?

Haven't done Foundation yet, though I've heard good things. The Expanse, being the more hardline sci-fi series, could be watched in tandem with either The Orville or Lower Decks for the sake of occasionally breaking up the tone. LD is complete, whereas Orville is supposedly still coming back. Would give you more to enjoy later without interruption.

Now I want to see an episode where the Enterprise encounters a world where voodoo is real and the only one not affected by their voodoo dolls is Data because mumbo jumbo doesn't work on robots.
