OP, that is one beautifully assembled bowl. I am strongly of the opinion that bún thịt nướng is one of THE perfect foods: hot, cold, sweet, salty, sour, savory, spicy, bitter, crunchy, crispy, chewy, creamy(ish, depending how much nước chấm you use and how much is left at the bottom). There are not a lot of recipes that fire on all cylinders like that.
More abstractly, I found that expanding the flavor gamut to include more of the above takes my recipes from "yeah, that's decent" to "POW!"
I finally have words i can use to describe it. Yes it is the PERFECT food. Though this picture was from last year, today i wouldnt put meat on it because im vegetarian
I have an intolerance for unfermented soy, but my mother's deep-fried fried lemongrass tofu in bún? Don't care. I gladly take the consequences for enjoying that bowl. :D And that's another beautiful thing about bún: swap out ingredients, use leftovers, go with what's seasonally available.
I recently only had wide ho fun noodles available. That was a pleasant variation with an enjoyable tooth to the noodles. I wouldn't necessarily seek it out, but it was a fun experiment in using what I had at hand.
