I’ve been a big fan of Hatch’s Supernova beans lately so I thought I’d try another from their Foundation series, Gamma.
I tried it as espresso yesterday and it was pretty decent, so now it’s time for pour over. I just wanted a small cup this time, so just 10/150. Kettle was set to 90°C, grinder to 6.3.
This is an interesting coffee for sure. Citrus and dark chocolate are notable for sure, I definitely agree with those notes. Floral is a bit more subtle, as is caramel, but I can taste them still. It’s a touch harsh but I think that’s my fault, they’re definitely not dialed in yet. Not my favourite bag of beans but not bad by any means. Once I get them properly dialed in for pour over I’ll do an episode of bean review for them. I’m currently working on my second episode but it’s for a different bag. These might be episode 3 or 4 though.
I should also note, Hatch say on their website this is more designed for espresso, and so far I’d definitely agree with that.

I have the same grinder and I always grind in the range of 2.5 - 3.5. Over 6 would be too coarse for any beans I've tried so far (talking about pour over / V60). Now it makes me wonder if something isn't right with my grinder 🤔

I’m using a switch and purposely did a bit coarse as I did a pretty immersion-heavy brew this time. 3.5 is definitely finer than I’ve ever done though, even for full percolation.

Bad vs good. Anger vs joy. This mug seems to embody our inner battle, exacerbated, but also alleviated, by the need to exist. Is one better than the other, or do they both coexist in harmony? I guess time will tell.

Try using a flat bottom v60, you get something similar to a French Press but more clean.

I’ve considered picking up an Orea but haven’t gotten around to it yet. They have an accessory that allows you to attach it to a switch base too, which I think is pretty cool.
I currently don’t have a flat bottom, but maybe soon.
