I’ve played OoT MQ on both the N64 and 3DS, the only differences is that the map is mirrored from the original game & the puzzles are different, they become more cryptic and less obvious (hidden switches behind walls you can’t see, I remember hitting a wall triggering a switch opening a door when I was in the water temple). Have you played MQ on the previous remake (3DS) and original (N64)? If so, is it harder than the original game?

Knowing Nintendo, it'll be a $50 DLC a year from now.

In terms of difficulty it goes:
Master Quest (N64)>Master Quest (3DS)>Original (N64)>Original (3DS)
Master Quest is mechanically more difficult with additions to some fights and changes to the items. The 3DS versions are easier than N64 primarily because they modernize the controls in a way that involves less fucking around with menus but also some quality of life improvements (namely the iron boots)
As to how much of the Original vs Master Quest will be in the new game? Hard to say. I would expect that the new game keeps the core dungeons and temples but within them expands the scope while also adding more mini games and probably a few new areas and side quests. Assuming it follows a normal Nintendo remake pattern

Especially the Water Temple on N64, you end up fucking around with menus A LOT just to put on and take off the iron boots since it's an aquatic dungeon. Also, a lot of points on playing the ocarina to change water depth are unmarked in N64 (but marked on 3DS) from what I saw on the latest gameplay of the remake: they retained the markings from the 3DS version hence making navigation easier.

Can't you just assign them to a c button? I feel like that's how I did it, but it was like 30 years ago almost...

Boots were equipment, not an item. You couldn't assign them iirc. You might be thinking of a later game.

Or more recent QoL romhack additions

The 3DS version made that QOL improvement.

So far it looks like everything shown in the trailer is directly pulled from the original version. The few puzzles and temple elements I recall seeing were ones I explicitly remember from the 1998 game.
My guess is that they may have added a little bit of extra content in terms of side quests or collectibles, but the vanilla experience is largely preserved.
