Of course they made them as nice to live in as possible. The walls were covered in tapestries or wood panelling and many rooms were heated. For unheated rooms there were movable heaters (basically small portable fire pits).
There were many different variants of jousting. While trying to knock each other off the horse was one of them, it wasn't the standard. More commonly you would try to break your lance on the opponent, with different scoring depending on where your lance hits.
Do you have a source for gunpowder coming to Europe through spain in the 14th century? Gunpowder is mentioned in european texts from the 13th century (but not necessarily for use in weapons) and as far as i know it isn't really clear how, where and when exactly it came to Europe.
