Same here, on Affine. It looks really good (and probably is), but I like to have my files where I can see them. Try Nota (paid, $49 after trial) and MarkText (free, not updated in a while and doesn’t do wiki links, although he seems to be looking at the files again). Assume you’re on macOS.
The AI is only there for those who use it. Other than a description of the note’s contents, your words are untouched
