That partnership was terminated. New girocards are simple girocards. Which also means they cannot be used outside of Germany anymore. Not all banks have this. And I think this is only possible on Android? From what I know Apple does not allow to replace Apple Pay.
Everyone that I know pays with their phone. So yeah, Apple Pay and Google Pay are big in some parts of Europe at least.

You do not have to. At least iOS allows you to select if you want to give access to all contacts, specific contacts or no contacts at all.
