I believe the point is if google was illegal where you live, it would be illegal if Google said "hey you can still reach us without the big man knowing by using our partners 'borgVPN' ". BorgVPN could be in trouble for the partnership, even if they aren't the actual banned service.
There's a multitude of reasons any business with critically important data to their customers (lawyer, accountant, etc as you mention) should not roll their own system to save a couple hundred dollars a month...
I don't use any banking apps, but from what I've seen on forums it can be hit or miss depending on the bank. I only use their webpages. If my bank required an app, I'd find a different bank.
There's no guide since everyone's use case is different, and 100% is only obtainable if you avoid all tech. GrapheneOS or buy an iPhone are the best options. I went the grapheneos route, but I still use google play services as I found its the safest way to still get apps for now, and the disconnect from google is still much more than using stock android. I moved email to proton, maps I use OsmAnd.

I've edited the post to add a note about an outbound rule possibly needed in the printer VLAN. If the printer VLAN is locked down, it could be blocking the advertisement before the UDP Relay gets a chance to see it. This should fix that. See if works for you

They did say they wanted the military to be more lethal. Didn't think they'd start with such soft targets as domestic passenger airlines though.
