Tailscale would work as another user said. You could run TOR too. I've got a TOR service that I can SSH into for "plan b" if my VPN is down. It doesn't need port forwarding.
Qbittorrent version 5.0+ has the settings in the web-ui so if you are setting it there you can ignore that part of your tutorial where it says to use qbittorrrent.conf (its the same).

To verify its working you should be able to add a new torrent, look at its trackers and see the new .i2p trackers added. They can be a little slow to connect initially.
Yup totally possible. You need i2p running with a SAM bridge. Last time I checked there are two releases of qbittorrent, one supports mixed mode for i2p. I believe it is the one that says lt20. Check the box in settings for i2p and mixed mode, set the IP and port for your I2P SAM bridge, auto add i2p trackers and you'll be cross seeding.
100%, like you said, email isn't really made for private communications. Even with me calling it out as not private, I do use fastmail as my main provider and like it.
Move the ports you are exposing from the qbit container to the wireguard container. The VPN container should be the only one exposing ports in this case.
But like someone else said, the gluetun image works really well for this.

You've set up the reverse proxy to your server, its transparent to him.
You can update DNS records automatically so its also a fire and forget kind of thing.

They want your IP or your phone. Use a VPN IP or TOR and they'll require a phone number. That's been my experience at least. I don't trust them.
