.de domains show your name in Whois (DENIC doesn't allow hiding it) but hide address/contact details by default. If keeping your name private is crucial, consider .com/.net instead - they allow full Whois privacy through proxy services.

For most services, .de is fine - they can't get your address or personal data beyond your name. Using your own domain for email independence is worth it. Just depends if you're comfortable with your name being visible. Most find this acceptable.
