I like musubi, but the price of Spam is ridiculous right now. I'll stick to my other choice of lips and asshole scraped from the very bottom of the barrel for now, bologna.
I bought it as an experiment and because it was trendy. Its pretty good- my first thought was that it tasted like miracle whip. Ive come around to it over time
American cheese isn't even "ultra processed". It's basically just cheddar with a couple edible chemicals added, one being a salt IIRC. Nile Red did a video on it

Honestly this would be pretty gourmet if you spread the mayo, go with two square Ritz instead one a round one, and cut the cheese/spam into square.
