Found my first woodland mansion ever

And it had lava on the side of it and burnt to the fucking ground lol..right near spawn too

You could delete the chunks it's in with MCEdit (or similar) and then load in the world - they'll regenerate.

Then either turn fire spread off (temporarily) and clear out the lava, or switch to creative mode temporarily and remove the lava / stop the fire, or rush in volunteer firefighter style and fix it. Gonna be hard to stop the legit way though, woodland mansions are very flammable. I've lost them to lightning strikes.

Couldn't one just pillar up to the roof with a few buckets of water and flood the entire thing from the top? Sounds kind of like a fun challenge...

For sure it might be fun to try, but fire spreads vertically in a funnel and water spreads in an opposite shape vertical funnel, so you'd need multiple buckets to hit it all.

Possible for sure. But you'd also be making all the carpet detatch, and other items. Could be messy if your aim is to preserve the mansion.
