Something I learned today: Prism Launcher and MultiMC Launcher (haven't verified the second) do modify Minecraft's telemetry, even in Vanilla to not send your user ID and client ID. So if you care about data protection or/and privacy, this is definitely beneficial.
Technically speaking, yes – depending on how you define "better". Minecraft, as software, is a nightmare. It's not well made in so many ways. Mods like Sodium and Lithium provide optimizations Mojang could have done themselves (though I think it's not really in their control what they work on, since Microsoft took over).
I also consider mods like "No Telemetry" to be a necessity.
I'm generally a very creative person, so I source my ideas from all kinds of things. But when I'm specifically looking for inspiration, I usually ask friends what they would like or watch modded Java Edition gameplay on YouTube. One of my favorite sources of inspiration on YouTube is "Content SMP." It is a partially scripted SMP with many participants who develop their own mods for it.
Even though I do not speak any of these languages, I believe it's good that they added them.
Language accessibility is more important than many English speakers believe, being unable to use software in a language you speak can be very limiting and frustrating.

They're fully allowed monetizing Java Edition. Look at Realms for example. They own Mojang AB, and Mojang owns Minecraft.

I would just use a normal server with Fabric and look for appropriate mods. Not sure if No Telemetry covers it.
