That looks like it would clog my arteries in one bite. Where can I get one?

Probably not. But if you're in northern Colorado it's worth the trip.

Oh shit. I'm only 40 minutes south of Berthoud. Guess I know what I'll be doing this weekend.

And it's surprisingly light for a kicked up grilled cheese!

Where do I get this or how do I make it

The owner told us make Birria beef and save the sauce. Pair the beef with a melty cheese and instead of butter dip the bead in the Birria sauce. It burns fast so cook it carefully and not too hot. Once you get that perfect crust serve with some of the Birria to dunk it in.

Perfection in my opinion!

So it’s pretty much a French dip, but with Birria and maybe Jack cheese?

Frying the sandwich in the fatty birria sounds even more amazing. It’s on my list for next week now.

It's French dip with Mexican grilled cheese! And I hope to hear how it went for you.

Jimmycrackcrack@lemmy.ml · 4 pts · 12d (3 replies)

What are the sides next to the dip?

BallShapedMan@lemmy.world · 4 pts · 12d (2 replies)

Lettuce, pickled onions, guac
