I'd guess that having access to plentiful shade and shelter from rain, year round, makes life a little bit less stressful for the sheep

Apparently, yes.

Not being in the sun or poor weather all day probably leaves more resources/energy for the body to use on the wool.

They've also found overseas that degraded land used for solar farms can be seeded with local wild herbs and flowers. I don't know if this would work in every case but it's been successful in the reported projects. Of course the invertebrate life has grown and with that birds and other animals like lizards, etc. Seeing as insects have been hit so hard everywhere this should be done in many more places imo. Also growing plants would keep the soil in place and even contribute to it.
