BLT with tomato butter

Too many tomatoes from the garden. So I made some tomato butter to use instead of mayo. I regret not putting more of it on. But I'll use the leftover for some pasta dish.

We call em BLCs because my wife and I are not really a raw tomato fans. My son has helped bring us all around though. He loves em.

You could do carrot bacon alternative. Carrot peeler, soy sauce, brown sugar, paprika, maybe some liquid smoke. Use the peeler to make strips. Dip. Bake until crispy.

I used this recipe but reduced the amount by half. I might be tempted to add a pinch of MSG in the future.

There are other versions where you cook the tomatoes down in a pot to evaporate enough juice to almost get a paste and work from there.

Some even skin ghd tomatoes.

You are going to want to make sure your ghee to be between liquid and solid. So refrigerate accordingly.

I start to panic if I don't have at least one pound of butter in the house at all times. Some kind of trauma response from childhood?

No judgement intended, but sounds pretty normal for The South, frankly. Similar with lard, I'd guess.

I grew up Italian so olive oil was the default. But butter was still essential.
