Shake before the squeeze

Pop lid, squeeze before closing lid, then shake. Ensures that pressure won't build up as ketchup warms.

Lower water activity reduces bacteria.

Not sure about flavour/texture however.

Time to make my own ketchup. With dried chilis, and MSG.
