There's a few problems with Bluesky if you're looking for a platform that won't eventually turn to shit.
The platform is not meaningfully decentralized. With Bluesky directing its future, they have the power to do whatever they want with it, including attempting to monetize and clamp down on access.
To fix points 1 & 2 above you have to run the full stack: a PDS ($5/month), relay ($30/month), and AppView (~$300/month), which is prohibitively expensive for most people.
Hosting your own mastodon instance, which cannot be easily blanket-censored costs ~$5 bucks a month.
If a system is the outcome it produces, Mastodon is a platform for the people, Bluesky a platform for large orgs.
There's a lot of people posting their own stories about how their flavor "just works", which is great, but all just anecdotes. The reality is, statistically, anything that changes often is more likely to fail.

The real danger is in extensions that are safe to use but later get sold and updated to spy on you with the same permissions you've already granted.
Best practice, as someone else already mentioned, is to use as few as possible and only those you trust or have wide community trust to help extend your own trust.

I installed the flatpak version and it worked without any tinkering, even Windows games. I've tried the "official" install method (a few years ago now) and ran into problems. I go for flatpak nowadays for simplicity. Lets me have a rock-solid OS and up-to-date apps.
I will say, the cool thing about it is the interoperability between ActivityPub platforms. For example, from my mastodon account, since I'm subscribed to some hashtags I'm interested in, I occasionally see posts from Lemmy/Piefed (reddit-like), Pixelfed (Instagram-like), Loops (Tiktok-like), etc. I can comment and like without having to create accounts on the other platforms. It's definitely more aligned with what the open web should look like, although could use some UX and discoverability improvements, as I'm not entirely sure how some stuff works, but it's been interesting to try it out.
Mastodon cannot be censored in the same way, thus no long-term enshittification. If you're going to switch away from Twitter, give Mastodon a try. It uses the same tech/protocol as Lemmy, Piefed, Loops, Pixelfed, m/kbin, etc.
