In my experience, Finder can't even do what it's named (find anything) and it feels dumbed down like it doesn't want me to find certain things (part of that may be MacOS's design though too) ;(
Windows file explorer was alright, until they botched it in Windows 11 (like how the botched everything in that "update"). Last time I used it at work, they still hadn't got tabs working without it being a buggy, slow mess.
Dolphin file explorer (for linux) is hands-down the best. It has every feature and integration I have ever wanted and it does what it says on the tin without being buggy. Truly the power users' file explorer.

You can do that. That is how I use thunderbird.
I don't remember if I had to change the default config, but I think it comes like that, no? Anyways, if not, it's probably an easy setting somewhere to get it how you like.

That said, a "log machine" that you describe could just simply be a portable executable with root access on the vpn server machine. With this root access it could probably easily see what network connections are being made and potentially sniff them.
Maybe I'm wrong though. I don't think it'd be easy to develop such an executable, but once made it could be portable, probably.
Unless you are a skilled network engineer/software dev in the field telling me it's not possible, then sure I shall believe you.
I think what they say makes sense. I read it the opposite way: How do I know any service with an audit really is as described the day after the audit concludes?
Most audits (as far as I'm aware) will tell the company maybe a week in advance that they are coming in to do the audit, so it'a not like surprise visits I don't think.
I 100% think it comes down to trust (and some accountability being that their code is open source). Audits feel like a gamed system.
And being open source is a way of showing what they are doing.
Run a beets container and tell it to import from the 'import' folder to my 'music' folder (beets tags all music with prompts before moving to my final music folder ofc).
Jellyfin (which already has a music library set up and pointing to my 'music' folder) automatically refreshes after a few seconds.
Listen and enjoy through jellyfin app/site OR through finamp (on android).
The best part is you can rip your music into the 'import' folder, or torrent, or get it direct from youtube. Thanks to the modularity provided with this setup, it doesn't matter.
