Hear me out: if you want to use lentils, how about a curry burrito? Make a coral lentil curry, pop a couple spoonfuls on a wrap, add rice, some veggies of choice if you want, roll it up and freeze.

I'm not a native speaker of English, and I've only recently learnt that the 'blueberries' I grew up foraging from the woods are in fact bilberries. Which is kind of interesting because although most people will call them blueberries, we have a regional name for them, 'brimbelles', that's kind of similar to bilberries when you squint your eyes.
Personally I emulsify my cheese fondue with a bit of cornstarch mixed in white wine. Do you absolutely 100% need sodium citrate to make mac and cheese? It seems a bit overkill to me.
My mac and cheese approximation consists in a liquidy béchamel sauce with a handful of cheese of the day. Perhaps try your recipe without sodium citrate and see if you like it?

So yeah I try to keep an open mind and investigate rather than reject the idea because of conditioning or blindly embrace the concept without putting due diligence into it.
