There does exist a Mastodon instance in I2P. I know no more than that. If you self-host your own instance in I2P, you might find out the others.

Devuan and Peppermint Devuan edition are good ones. These basically are Debian but you can use OpenRC.

I don't recommend Alpine, it is a non-GNU Linux and was not developed for desktop/workstation usage, so you might encounter undocumented issues.

The closest thing to Artix is Gentoo, a DIY distro with OpenRC, but it is for the real geeks.

What do you mean no tracking since you own your own server? If you use it alone, there is a straightforward correlation between the requests from your searxng instance and you, the dude who hosts it. The idea of searxng is that requests of many people become mixed together through an instance

No one will use GNOME OS except for GNOME ecosystem devs. Even the DE itself has two long-term active forks and a flashback edition because virtually no one wants to use GNOME as is.

Same applies to KDE except it is accepted as is, but again, what's the point of using it if you are not one of their devs? And why do we even need two KDE distros?

I wasn't speaking yet of Aeon, this one seems more promising, but again, people who don't want to bother themselves much just don't use rolling release, it has always been for the fearless ones.
