It rarely breaks sites, but occasionally captcha doesn't work. That's a privacy Badger thing that you can disable temporarily or for the site entirely.
I also use Lineage OS, F-Droid only, no Google anything or any big tech. The "biggest" tech company might be Proton. But I like their mail service with custom domain support and SimpleLogin aliases.

I've started utilizing the Open formats bc M365 started supporting it as well. It'll often ask which format you'd like to use, so this is what I do now to hopefully push others to use them too.
On older hardware I would agree it can be cumbersome. At work, I've swapped everything to Ubiquiti and it's a couple clicks and I'm there. I liked it so much I did it at home with some caveats. Local account only and blocking anything phoning home.

I then read you're Problem box and confirmed you don't need NVR on Docker. Seems overkill or really, pointless.
A. Do you absolutely NEED the VLAN for your NVR? Why not just isolate the devices on the network with a bogus DNS record or FW rule blocking via MAC or IP?
B. Why run NVR through Docker? I hate devs who only containerize and don't allow for options. Deal killer, personally. But it it has a native option, why not run that? It's just extra steps for traffic to pass through which feels like a complicated bottleneck.

This is proven bc I can watch old HP on my old 2011 FHD TV and it doesn't look entirely different than my newer UHD HDR screen. It's that way on purpose. Otherwise older films would all be blown out with coloring or contrast too, and they're not. Only retouching when going from VHS to DVD and/or DVD to Blu Ray, etc. Format changes do usually get a remastering.

A repeater is NOT going to add privacy. You're still linked back to the main gateway which controls all settings.
If you're absolutely stuck with ISP equipment, immediately change away from built-in DNS like Comcast's 75.75.75.75, ignore Google DNS cuz it's just as bad. Quad9 is the noisy trustworthy IMO. 9.9.9.9 and 149.112.112.112 for secondary. I would also change default login info and default WiFi passwords if you haven't already. Disable WPS connectivity, update firmware, etc. This helps harden and secure.
If you're able to run your own equipment, that'll take you running the ISP device in "bridge mode" which hands off traffic to your gateway/wireless router. You can then look to bump security settings through forums or parts online, but will vary greatly with your own budget and technical prowess..

How tech savvy are you?
How much privacy are you looking for? DNS? Ad blocking? Full on VPN? (Which, VPNs are work themselves because some people refer to a Wireguard VPN but that connects them back to their own local network where others use Proton or 3rd party VPN service for hiding/encrypting "all" external traffic)
Have you looked into changing some browser settings for added privacy? What do you use currently?
