This seems really delicious. I think if a made it, I would use a mandoline and slice the cucumber paper thin, then shingle it on. I think you'd get the flavor and moisture of it without too much of a tough bite, considering all of the other ingredients are pretty soft (or in the case of the bacon, kinda crumbly)

I've done exactly that. It's not worth it. Cucumbers are slippery. The fewer slices you have the better it stays together. If you want to maximize structural integrity then cut sheets of cucumber and weave them together.

Darn it, I don't use cukes nearly enough. They're so nice for bringing a 'coolness' and 'wateriness' that can nicely balance spicy food or dry-ish meats, such as that bacon, there. I think they work great in gyro wraps too, for the same reason.

Not that a gyro needs any cooling beyond tzatziki sauce. But you can't always order double meat, no lettuce because of poverty or health reasons.

Well, I tend to hit almost every non-sweet food item with hot peppers and garlic, so the cukes definitely help me there. For me, food is a delivery system for garlic and spice. :D
