If dogs only ever leave the house to go on walks do they assume you're just out walking without them whenever you leave?

Never had pets so don't really know how it works

I can't speak for cats, but dogs can smell where you've been. If you leave in the car especially or go to work, they'll be able to tell. They also get routines.

Cats can also smell where you've been, they just don't generally care.

My cats often sit and smell me when I come home, and if I've been petting or cuddling with other animals I get the look of absolute betrayal and they go and sulk for awhile. When one of my cats was a kitten he used to smell my feet whenever I got home from work and if I'd been sweating he'd keep chasing me around and biting my feet until I got in the shower, but thankfully I trained him to stop that 😂

My cats seem to love smelling and rubbing themselves all over our shoes. We often find them turned upside down. They go extra nuts when we come back from the vet's.

My dog smells my car bumper on days I've been out, so I assume she thinks I'm taking the car for a walk

Dogs can tell a lot from your smell, so they will for instance know you were in the office, visiting someone or went to the doctor.
