Cashew

Closest in flavor to peanut butter but no risk of accidentally committing "kiss of death" on my SO

Cashew butter mixed with water makes better cream of mushroom soup than cream does; I say this as a dairy afficionado, I don't do it as a vegan thing, I make it that way because it's better.

So for soup, cashew I agree. Hazelnut for sweet things, and peanut for other savory stuff.

I've tried making peanut, sunflower seed, and pistachio butter before. Ironically, the peanut butter was my least favourite. The pistachio butter was nice, but I'd rather just eat the pistachios. So the winner is the sunflower seed butter.

For all of them, I just put the seeds/nuts in a blender and blended them and bashed them with the tamper until they turned into a non-Newtonian fluid. The sunflower seeds and pistachios were already roasted and salted, and the peanuts were already roasted and I added a bit of salt and honey.

You need a powerful blender with a tamper for this, though: I have a Vitamix 5200 I bought off Kijiji (because new ones are extremely expensive).

I found that the peanut butter in particular was not really worth it: 1 kg of peanuts seemed to be roughly the same price as a 2 kg jar of peanut butter.

The price difference on the peanuts is the grading. The grade A nice looking peanuts get sold as whole peanuts for full price. The ugly, broken leftovers ones get sold cheap & turned into peanut butter.
