Disclaimer: my tastes in doom seem to be different from the vast majority of doom lovers.
For me, doom is slow and sad, hopeless. As we go down the list, it'll be less and less like this, but the sound/vibe will still be there, imo despite the change is style/lyrics.
There's only one album that I'd call perfect for my tastes and that's warning - watching from a distance. Some other great albums:
My dying bride's feel the misery (among other great albums that they have)
While heaven wept - sorrow of the angels
Draconian - arcane rain fell
Solitude aeturnus - alone
Swallow the sun - new moon
Bongripper - Satan worshipping doom
Empyrium - songs of moors and misty fields
Isole - silent ruins
Ahab - the boats of Glen carrig
Overmars - born again
Thy listless heart - pilgrims on the path of no return
And altho it's not really doom metal, to me they fit super well : anathema's alternative 4 and judgement
Yob are also great
Rotting Christ - rituals (technically a black metal band but they're also not typical black anyway.. especially not this album)
Primordial - where greater men have fallen (similar to rotting Christ)

Over the past few years? I know they've been around for over a decade, but Pallbearer are still pretty current and their most recent album really hit home.
Along with them, there has been a really good surge of death/doom bands such as Fossilization, Krypts, Spectral Voice and Tomb Mold.

Time is relative, what's recent to you might be old to someone else. Who am I to judge? If it dooms, it dooms. Hell, you can be around for a decade and still be recent! Pallbearer being the perfect example haha.
Opium Heathen has been around for at least a decade as well, but only recently dropped their first full album.

I went to a show and Divide and dissolve were opening and I was blown away by how a two person outfit could sound that intense. They're also really cool and I happen to wear their t-shirt right now.

I’ve been digging some Lux Incerta for a while.
They are pretty solid but one of those bands I hesitate to recommend and I’m not sure why? I think because they could be really solid but sometimes they drop an incredibly tasty riff and then completely fucking abandon it after like two bars.
The first song (at 15 minutes) is really solid after a maybe-too-long intro, and the transition into the second song and the first minute or so are genuinely great and then it gets kinda mid.
There’s flashes of a really solid band but the songwriting could use some work I guess? Either way I’ll still argue they are underrated but I don’t listen to them unless I’m in the mood for that specific album.

I’m listening to them for the first time in a minute and it’s either better than I remembered or I’m just in the mood for some French sadboy shit but I’ll upgrade them to good at least.
