Uhh, because George Lucas said so. The original trilogy is an analogy for the Vietnam war. Nazis were obviously an inspiration as well, but you can't possibly look at the battle of endor and not see the vietnam parallel.

I think there was WWII motifs because at the time the original trilogy was being filmed, left over weapons, uniforms, etc were extremely cheap to buy and there was a lot of it available. Lot of material for low cost is always good for film.

The movie was TOO good. Paul wanted to create a seductively fascist movie, he succeeded. But in doing so he made one of the greatest action movies of all time. It came of as "Sci fi adventure" when what he was trying to portray is how tricky and seductive fascism actually is.
