When you add /24 you are exporting to the entire subnet. A single host export looks like this

/srv/nfsv4 192.168.0.10(ro,sync,secure,root_squash,subtree_check,fsid=0)

Just leave off the subnet mask.

A VPN dos not protect your device. A VPN protects your network traffic because it stops someone on the local network from capturing and manipulating that network traffic. It does not stop someone on the local network from attacking your device directly.

With the charger I linked you don't need the original charging bricks for any that use a USB cable, you only need the cable. Including iPad, iPhone, Macbook. It saves even more space.

Hotels will generally not have step down transformers in my experience. I would leave the us power strip at home. Instead get a charger like this https://us.ugreen.com/products/100w-6port-desktop-charger that can charge all your devices. It is dual voltage 50/60Hz and the power cable is removable so you can change for one with an euro plug that works almost everywhere in europe. You can bring a small adapter for the places where the euro plug doesn't work if you are going to any.
