My FYP is full of food people and one of them walks around NYC getting food. Saw him getting a store bought version of this and thought it would be simple to make at home. I used Hillshire Farms sandwich meat for my pastrami but I'm not going to complain. It was excellent. Thick cut fresh pastrami I am sure would be better but we all work with what we have.

This was made with the heart and not much of a recipe. Potatoes pan fried with Cajun seasoning, andouille sausage, green bell pepper, jalapeno, onion, eggs, cheddar cheese, more Cajun seasoning. Build in tortilla and than grilled on the outside. Salsa on the side.
