That being said, it's only like $300 more to upgrade to the Pro and you get more power, ports, battery life, and vastly better display technology.

60hz is extremely noticeable on a mobile device since the whole UI is gesture based and everything constantly moves around. On computers since the UI is stationary it matters significantly less although it's definitely nice to have.
While it's getting less common, many similar mid-range laptops, especially business/productivity oriented ones, have a 60hz screen. MacBook Pro has it if you want 120hz.

There's no way that you're saying not having 3:2 pull down is more beneficial than higher refresh rate when using the OS, but I respect the opinion
