Have you seen the Home Ops repos? This is what I followed to get full git-ops from 0 to production using just a few commands.
This repo is quite complicated and I don’t think you need everything. At the heart of it is the App-template helm chart template. This lets you create similar deployments for most applications that don’t have their own helm chart.
The flow is then to use flux to converge against a a git repository.

I tried Authentik then moved to Authelia and then to pocket-id. I found the first two unnecessarily complicated for selfhosting unless you want to specifically learn them.
Setting up https is quite straightforward, especially with caddy.
I was just thinking, and I fucking hate to say this but, trump was (ugh) right when he called them the “do nothing democrats”. Joke of a political opposition.
I'm not familiar with Watchtower, I assume it will restart the container/stack if a new image is found. The biggest difference is that an edit to the git repo causing the container to be redeployed. This means the git repo becomes the source of truth and its possible to redeploy even when config changes get merged.
I’ve been doing this in my kubernetes cluster since immich was less than v1.49.0 (that’s the earliest I can find but it’s been over 4 years).
Your comment could have been more constructive: something like “this is really cool, just be sure you don’t auto merge PRs without reading the patch notes. Learn about the process before you roll this out to your mission critical systems!”
This is a learning opportunity (possibly even for you). Show others how to do things well and the whole community can benefit.

Pocket-id also supports ldap sync https://pocket-id.org/docs/configuration/ldap
