I’ve taught myself to create a visual fingerprint of when I do things that normally forget if I’ve done or would be bad if I ever forgot. I remember the surrounding scenery and my exact mannerisms when I do things like locking the door or turning something off.
That way, when I have those doubts I reply it in my mind and see all the unique details related to me performing the task. “Oh, yeah, I did lock the front door because I had to look at my key to make sure it was right side up.” And the doubt disappears.
how do you know you aren't remembering a different day? Like, you remember seeing yourself turn off the stove, but then you wonder if that was yesterday or today.
Not the same person, but to me there's a different feel to the lingering fingerprint of a recent working memory and the memory of longer-term storage. It's enough to matter.

I haven't looked into it, but those are the only smart features I'd really want.
Tbh when this happens I just say “yes I am willing to let bad thing happen” then of course it doesn’t happen and these thoughts go away through practice

At that point, you might as well say that if it's a smart appliance, it might glitch to turn on all by itself even if you check it yourself.
