Hmm seems risky. I'd be worried about the oxidation but I imagine the aromatics really stand out better this way. You'll need to do bench trials to determine the variables for spilling speed, spread, and the counter/floor ratio.

I finally decided it was worth losing a little aroma from grinding the beans and loading the filter the night before in order to have coffee at the touch of a button when I'm sleepy.
I like pourover, but I also don't like super hot coffee, so I make mine before bed and vacuum seal it in a mason jar. Then I either have "iced coffee" in the morning or I give it a quick reheat to an immediately drinkable temp. With the vacuum, I don't really get a discernable taste difference by the time I wake up.

This happens to me more often than it should. I blame it on the fact I need a coffee to make a proper cup of coffee.

It just seems weird to have a plastic tube sitting in the hot coffee.

It stops the coffee forming layers, so that early drips and late drips don't separate from the dripping.
