It’s genetic and we all grow up with milk as a normal thing in many countries with European heritage, so it’s easy to not realize that there are large populations where almost everybody is intolerant.

Human babies are weaned onto calf etc milk

Weaning them onto calf etc milk is a slow process while they adapt to be able to consume something they were never meant to consume.
