Mushishi, it's just so relaxing without being devoid of tension and humanity. I know it has a bit of a reputation as a "namedrop" anime that people profess to like to appear cultured, but honestly it's simply very very good and pretty unique.
Bofuri - comfy, zero stakes adventure, with satisfying underdog-to-overpowered power fantasy.
Full Metal Panic? Fumoffu - fast paced, silly, and sweet action rom-com.
Interspecies Reviewers - episodic sex comedy. Despite the brazen fanservice, it's actually more respectful towards women and body types than most anime.
Kaguya-sama - mostly episodic rom-com, very fun and sweet without much drama.
Konosuba - king of comedy isekais, but secretly has heart beneath all the snark.
Sleepy Princess in the Demon Castle - cozy, kid-friendly episodic fantasy comedy.
it's generally a 6/10 spin-off rom-com, but with one solid 10/10 arc that makes it all worth it that ties it in with the main series and movie so well I'd consider it an essential must-watch for Haruhi fans.
I don't remember what happened exactly anymore when they weave in the main story but I remember it being quite touching. I also love the ending theme and its music video on YT. It definitely reveals things not revealed in the main series so definitely a must watch for fans indeed.
I don't know if I have anything I'd describe that way, but on the rare occasion I feel like turning my brain off and re-watching a show I know I like I'll usually just pick some random thing that I rated 8-10 on my Anilist account.
I suppose a few likely candidates are:
Kaguya-sama: Love is War
Fullmetal Alchemist Brotherhood
Gundam Build Fighters (season 1 only)
Log Horizon (if I'm feeling nostalgic)
Really depends on the mood I'm in though. In the past I might've put Legend of the Galactic Heroes on that list but it's felt a little too real these past couple years for some reason.
I was in just such an impressionable age at the time, really related to Renton. Did a rewatch a while back and it was all holland. Rewatching now I feel like im more relating to Charles. Its been neat having it as I've aged and the different perspectives.
I dunno, I mostly try to consume new content. There's a lot of stuff I'd like to go back and watch in Japanese, from when I had to watch in English because my eyesight was bad, subtitles didn't work for me. So that is to say, if I were to revisit anime, it would be for the purpose of hearing it in the country's native language and experiencing a whole new cast. I quite like Japanese, but I don't know enough of it to not need subtitles.
I've recently-ish rewatched Boku Dake ga Inai Machi (Erased but I hate the English name of it) and Angel Beats!... oh, and Your Lie in April. I love a good sad story, to a point.
I was thinking about saying Fullmetal Alchemist: Brotherhood, cause I still rewatch it every year or two, but thinking about what I watch for COMFORT? Like, it's my comfy thing to put on in the background, way too often? Dragonball Z: Abridged.

The Disappearance of Nagato Yuki-chan
it's generally a 6/10 spin-off rom-com, but with one solid 10/10 arc that makes it all worth it that ties it in with the main series and movie so well I'd consider it an essential must-watch for Haruhi fans.

Yuru Camp, I can put on in the background and trust that I can fall asleep to it in less than one episode.
