Scientists who work with cockroaches often develop an allergy to them, which leads to them being allergic to ground coffee. Whole bean coffee is still okay. The difference is how likely you are to grind up a cockroach vs. a commercial coffee grinder.

I think I'd notice, because I look at the food I'm eating. I suppose ground beetles look different enough from ground pepper.

There are dedicated online shops and the only other place I've ever found them IRL was a camping/outdoors supplier, they are a very light source of protein.
That's in the EU though, don't know how insect food is regulated wherever you live.
I never bought it though, I found it pretty expensive, don't really need it, and I'm a vegetarian anyways.
I have tried them at a museum once, though. Pretty unspectacular if you ask me, a bit nutty in taste but also quite dry. I prefer actual nuts as a snack.
